  • Brewed bulk coffee (of your choice) – 2 cups
  • Unsalted butter – (preferably grass-fed) – 2 tbsp.

  • Heavy cream (optional)
  • Vanilla extract – 1 tsp. (optional)

How to Prepare:

  • Brew 2 cups of the coffee of your choice. Pour into a mixing bowl or measuring cup.
  • Add unsalted butter and coconut oil into the bowl. Mix well using an immersion blender or a regular blender until the mixture foams up on top.
  • Pour the mixture into a coffee mug. You may choose to add heavy cream and vanilla extract to make it sweet, although this step is optional to follow.

  1. Coffee Cake in a Cup

Cupcakes are anybody’s favorite and when you have the added magic of coffee with it, it’s simply irresistible!

Ingredients:

  • Butter – 1 tbsp.
  • Sugar – 2 tbsp.
  • All-purpose flour – ¼ cup
  • Vanilla extract – 2 drops
  • Applesauce – 2 tbsp.
  • Baking powder – 1/8 tsp.
  • Butter – 1 tbsp.
  • Salt – to taste
  • Flour – 2 tbsp.
  • Cinnamon – ¼ tsp.
  • Brown sugar – 1 tbsp.

How to Prepare:

  • Take butter in a large mug and place it in the microwave for about 5 seconds. Remember not to melt the butter.
  • Add sugar and mix it well with the butter until it blends in.
  • Now add applesauce, vanilla extract, flour, baking powder, and salt until it combines well.
  • Use the backside of a spoon to spread out the mix smoothly at the bottom of the mug.
  • For the streusel, take a small bowl and add butter, flour, brown sugar, and cinnamon to it.
  • Stir in until the mix starts to give the appearance of lumpy sand. Pour it over the cake batter in the mug.
  • Place the mug in the microwave again, this time for about 50-80 seconds. At about 1 minute, it’d look just about set on top of the mug. Avoid overcooking since chances of faster burning are higher in the microwave. Try cooking for 50 seconds first and increase the time by 10-second intervals.
