How Much Yeast Is in a Packet? Seven Grams, and Three Quarters of a Tablespoon

The teaspoon answer is everywhere. The tablespoon answer is the one people actually need, because a whole tablespoon is a third too much.

One US packet of yeast holds 7 grams, which the label prints as a quarter of an ounce and which measures 2¼ teaspoons. That figure is the same for active dry, instant, rapid-rise and bread machine yeast, and the same across every major American brand.

In tablespoons it is exactly three quarters of one. Not one tablespoon, not "about a tablespoon" — 2¼ divided by 3 is 0.75 with nothing left over, and it is the cleanest answer in the whole of yeast measurement.

And because recipes rarely want exactly one packet, the multiples. Two of these come out even and the rest do not, which is worth knowing before you start levelling spoons.

Only three rows land on a whole or half tablespoon: two packets at 1½, four packets at 3, and the single packet at ¾. Everything else is a teaspoon measurement whether you like it or not.

Fleischmann's publishes the same ladder in teaspoons on its own site — one packet at 2¼, two at 4½, three at 6¾ — which is a useful cross-check, because a chart that steps consistently is a chart somebody checked.

Is a packet a tablespoon? No, and here is why so many people think it is

This is the single most asked question about yeast measurement, and the reason it gets asked is not carelessness. It is that the answer used to be yes.

Real Simple says the same thing and adds the reason: this is not shrinkflation, but manufacturers learning to make yeast more potent, so less of it does the same work. A conversion newsletter that has been publishing charts since 2004 puts it the same way. None of the three is the manufacturer, so treat the history as well reported rather than certified — but the effect is visible in any recipe written before the change.

So when a family recipe asks for a tablespoon of yeast and a packet asks for 2¼ teaspoons, the recipe is not wrong and the packet is not wrong. They were written to different standards, and the gap between them is a third.

The three wrong answers, priced

Three figures circulate for a single packet. Here is what each one actually puts in your dough, measured against the 7 grams the packet contains.

Scaled at 3.11 g per level teaspoon, which is the packet's own 7 g divided by its own 2¼ teaspoons. The next section explains why these are approximate rather than exact.

None of these will stop bread from rising. Yeast quantity is forgiving, and what changes is the pace of the rise rather than whether one happens. But a third more yeast is a noticeably faster dough and a yeastier flavour, and on a long or overnight ferment it is the difference between a dough that is ready when you are and one that over-proofed while you slept.

The "two teaspoons" answer has an interesting defence, incidentally. King Arthur elsewhere describes a 7 g packet as a slightly heaped 2 teaspoons, which is the same weight described a different way. That is the real lesson of the whole question: 7 grams is a fact about the packet, and how many spoonfuls it fills depends entirely on how you scoop.

Measuring from a jar, which is what most bakers actually own

Buy yeast more than occasionally and you stop buying strips of three. The 4 ounce jar is the standard next size up, and every page that mentions it says it holds sixteen packets.

That is right in ounces and slightly wrong in grams, and the gap is a small lesson in where the 7 comes from.

The whole gap is that one rounding. A quarter ounce is 7.0874 g, every maker prints it as 7, and 16 × 0.0874 g is 1.40 g — precisely the shortfall. You get about a fifth of a packet more than the label arithmetic promises.

Two practical notes for jar measuring. Use level teaspoons rather than heaped ones, which is what Southern Living advises and what the 2¼ figure assumes. And if you have a scale, use it: yeast is the ingredient in a bread dough where the smallest absolute error is easiest to make, because everything else in the bowl is measured in hundreds of grams and this is measured in single ones.

There is no exact grams-per-teaspoon, and that is fine

Everything above is scaled from one ratio: 7 grams to 2¼ teaspoons, which gives 3.11 g per teaspoon. It is the best figure available and it is still an approximation, for two separate reasons worth knowing before you trust any chart to three digits.

The first is the label. A quarter of an avoirdupois ounce is 7.0874 grams, so the familiar 7 is already rounded, and 1.2 percent light against the ounce printed beside it. Scale from the ounce instead and a teaspoon comes out at 3.15 g.

The second is bigger, and King Arthur's ingredient weight chart demonstrates it against itself. The chart rounds every row to a whole gram, so three rows that describe the same ingredient imply three different densities.

King Arthur's chart, which we could not fetch directly because the site blocks automated access; these figures come from our research pass and are consistent with the packet definition. They cannot all be exact, because rounding each row separately to whole grams guarantees they disagree.

Those three rows differ by 3.7 percent. So a tablespoon of dry yeast is 9 g on that chart and 9.33 g if you scale it from the packet, and neither is wrong — the chart rounded and the arithmetic did not. The conclusion is not that one figure wins. It is that a spoon of a granular ingredient is worth about two significant figures, and if you need better than that you need a scale.

Use 3.11 g per teaspoon and treat every derived gram figure on this page as approximate to within a few percent. The one number on the page that is exact is the ¾ tablespoon, because that comes from dividing teaspoons by teaspoons and never touches a weight at all.

How many packets for the flour you have

Red Star publishes its guidance against flour rather than against a recipe, which is more useful when you are scaling something up or writing your own.

That first row catches people out. A recipe using two cups of flour does not need half a packet; it needs a packet, or slightly less if you want a slower rise for flavour. Yeast does not scale linearly with flour the way water and salt do, because a smaller dough is not a proportionally smaller fermentation problem.

Read against King Arthur's 120 gram cup of all-purpose flour, one packet across four cups works out at about 1.5 percent of the flour weight. Which puts the most common metric loaf in the world, five hundred grams of flour, at 7.3 grams — one packet, almost exactly.

Does the type of yeast change what is in the packet?

No, for every US brand on a supermarket shelf. Active dry, instant, rapid-rise, quick-rise and bread machine yeast are all sold in the same ¼ oz, 7 g packet, and Red Star applies one packet equivalence across its active dry, quick-rise and Platinum lines alike.

Granule size does differ — instant is milled finer than active dry, which is why it dissolves into a dough without being hydrated first. In principle a finer granule packs differently in a spoon. In practice both makers print 2¼ teaspoons for both forms and neither publishes a separate figure, so there is no second number to use even if you wanted one.

When a recipe wants part of a packet

Half a packet is 1⅛ teaspoons, which is a teaspoon plus a scant eighth and is exactly as awkward as it sounds. This is the case where a scale earns its price: 3.5 grams is unambiguous in a way that an eighth of a teaspoon never will be.

If you have no scale, measure 1¼ teaspoons and take a little off, or measure the full 2¼ into a small bowl and halve it by eye. Yeast tolerates that far better than it tolerates being left in a warm cupboard for a year, which is the actual reason most doughs fail to rise.

  • Use 2¼ level teaspoons when a recipe calls for one packet
  • Use ¾ tablespoon if the tablespoon is the spoon in your hand
  • Weigh 7 g instead, whenever a scale is available
  • Treat a tablespoon in an old recipe as the packet it was written for
  • Take yeast from a jar with a dry spoon and reseal it straight away

Don't

  • Substitute a full tablespoon for a packet — that is a third too much
  • Assume a 4 oz jar is 16 packets by weight — by the gram it is 16.2
  • Heap the teaspoons, since 2¼ assumes level ones
  • Halve the packet for a half-sized recipe without checking the flour band
  • Buy a jar if you bake a few times a year, because opened yeast has four months

Is a packet of yeast a tablespoon?

No. A packet is ¾ of a tablespoon, so a full tablespoon is 9.33 g against the packet’s 7 g — about 33 percent more yeast. The reason so many people ask is that the answer used to be yes: Real Simple and other conversion references report that older US packets held a full tablespoon, and that the amount fell because manufacturers made yeast more potent rather than as any kind of shrinkflation. If a family recipe asks for a tablespoon, it was written for the older packet.

Is a packet of yeast 2 teaspoons?

Not quite. Two level teaspoons is about 6.22 g against the packet’s 7 g, so it runs roughly 11 percent light. The figure to use is 2¼ teaspoons. The "2 teaspoons" answer is not baseless, though — King Arthur describes a 7 g packet as a slightly heaped 2 teaspoons, so the same weight can honestly be called either depending on how you scoop. Red Star’s own conversion chart says 2¼ in its table and 2 in a footnote further down the same page.

How many packets of yeast are in a 4 ounce jar?

Sixteen by the label, and 16.2 by weight. Four ounces divided by a quarter ounce is exactly 16, which is what most pages print. But 4 oz is 113.40 g while 16 packets at the printed 7 g is only 112 g, and the 1.40 g difference is the rounding: a quarter ounce is really 7.0874 g, and 16 times that 0.0874 g is exactly 1.40 g. So a jar gives you about a fifth of a packet more than the arithmetic promises.

How many tablespoons are 2 packets of yeast?

Exactly one and a half tablespoons. Two packets are 4½ teaspoons and a tablespoon is 3 teaspoons, so it divides cleanly. By weight that is 14 g. This is one of only three amounts that land on a whole or half tablespoon — the others are one packet at ¾ tbsp and four packets at exactly 3 tbsp.

How much yeast do I need for 4 cups of flour?
