Where the 240 ml cup comes from
The US legal cup used for nutrition labelling is defined as 240 ml exactly, which is the figure this table is built on. The older customary cup is 236.588 ml, a difference of 1.4 percent. Either is fine for cooking; mixing them within one recipe is what causes trouble, so the table stays on one.

This is why metric recipes are easier to follow than cup recipes, not harder. A gram figure is unambiguous: 250 g of flour is 250 g of flour whether it was sifted, packed or shipped across an ocean first. A cup figure carries an instruction about how to fill the cup, and that instruction is usually missing.
What to do with an untidy figure depends on the ingredient. For sugar, butter and liquids, close enough really is close enough and you can round to the nearest quarter cup. Why there is no single grams-to-cups factor
Search results will happily offer one. The usual candidate is 1 cup equals 240 g, which is correct for water and wrong for almost everything else in a kitchen. It survives because water is where the metric system anchors volume to mass, and because it is the only ingredient for which the two happen to coincide.

The same rule under-measures flour by half and over-measures honey by forty percent. A recipe survives neither error. This is what a universal factor actually costs, and it is why every serious conversion chart is organised by ingredient rather than by a single number.
The one place a universal figure is safe is water and things close to it: milk, stock, thin juice. Their densities sit within a few percent of water, so 240 g to the cup holds well enough for cooking. Everything with air, fat or sugar structure in it departs from that immediately.
Turning a decimal into something you can measure
