A twelve to fourteen pound turkey, unstuffed, in a 325 °F oven, takes three to three and three quarter hours. That is the USDA figure, and it is the answer to the question as asked.
It is also a forty-five minute window, which is the part worth understanding. USDA does not publish a cooking time for a turkey. It publishes a range per weight band, then says the times are approximate, then lists eleven separate things that can move them. The bird is not done when the clock says so. It is done at 165 °F.
The USDA timetable, in full
Set the oven no lower than 325 °F. USDA notes that preheating is not necessary, and that the times below assume a fully thawed bird starting from a refrigerator at 40 °F or below.

Put the two tables side by side and stuffing costs less than its reputation suggests. It adds between zero and thirty minutes depending on the band, and in the 14 to 18 pound row the upper bound is identical at 4¼ hours. The folklore that a stuffed bird needs an extra hour is not in the table.
Why "minutes per pound" cannot work
The most repeated turkey rule is a flat rate — fifteen minutes per pound, or twenty. Work the USDA table backwards and you can see why no single rate survives contact with it.

The rate falls as the bird grows, and it falls a long way — a 24 pound turkey needs barely more than half the per-pound time of an 8 pound one. That is not a quirk of the table. It is geometry.
Heat enters through the surface and has to reach the centre. As a bird gets bigger its volume grows faster than its surface area, but the extra distance to the middle grows more slowly than the extra mass, so big birds turn out to be more efficient per pound than small ones.

At the other end the same rule under-runs: an 8 lb bird at 20 minutes per pound gets 2 hours 40 minutes against a USDA minimum of 2¾. A flat rate is wrong in both directions and only crosses the truth somewhere near 12 pounds.
The eleven things USDA says can move the time
This is USDA's own list, not a blogger's, and it is the reason the timetable is a range rather than a number. A partially frozen turkey takes longer. A stuffed turkey takes longer. The oven may heat unevenly, and its temperature may simply be inaccurate. Dark roasting pans cook faster than shiny ones. A pan that is too deep or too crowded blocks heat from reaching parts of the bird.
A foil tent left on the whole time slows cooking; a roasting pan lid speeds it up; an oven bag accelerates it further. Rack position changes how heat circulates. And a bird or pan too large for the oven blocks circulation altogether.
What actually decides: 165 °F, in three places
“The temperature of the turkey and the center of the stuffing must reach a safe minimum internal temperature of 165 °F. Check the temperature in the innermost part of the thigh and wing and the thickest part of the breast.”
Three locations, not one. The innermost part of the thigh, the innermost part of the wing, and the thickest part of the breast — and all three have to reach 165 °F, which is 73.9 °C. Checking only the breast is the common shortcut and it is the one most likely to leave the thigh short, because the thigh is denser, closer to the bone, and further from the oven's radiant heat.
The 165 °F figure is current USDA guidance for all poultry, whole or in parts. The older advice that dark meat needs 180 °F still circulates widely and is no longer what USDA says. It also notes that cooking beyond the minimum is a matter of personal preference, which is worth knowing if you like thigh meat that falls off the bone: going past 165 is a choice about texture, not a safety requirement.
The twenty minutes is for carving, not for safety
Almost every turkey guide tells you to rest the bird and implies that the rest is part of making it safe. USDA's own wording is more precise, and the distinction matters.
“For quality, let the bird stand 20 minutes before removing the stuffing and carving the bird to allow juices to set. The turkey will carve more easily.”
For quality. USDA's safe-minimum chart lists rest times for some meats — whole cuts of beef, pork, lamb and veal carry a three minute rest as part of the safety standard — and poultry carries none. A turkey is safe the moment all three locations read 165 °F. The twenty minutes buys you a bird that carves cleanly instead of shedding its juices onto the board.
Our calculator reflects that: it returns no rest requirement for poultry, because USDA specifies none. Rest the bird anyway. Just know which kind of reason you are acting on.

The refrigerator rate is the one that catches people out, because it is slower than it sounds. At a day per five pounds, a 20 pound turkey needs four full days, and a 24 pound bird needs five. Buying a frozen turkey on the Tuesday before Thanksgiving does not leave enough time to thaw it in the refrigerator, and no amount of planning fixes that on the Wednesday.
Cold water is faster and more demanding. The bird must be in a leak-proof bag, fully submerged, and the water changed every thirty minutes. At thirty minutes a pound a 16 pound turkey takes eight hours of tended thawing, and once thawed it must be cooked immediately.
USDA is explicit that perishable food must never be thawed on the counter, and must not sit at room temperature for more than two hours. The outside of the bird enters the 40 to 140 °F danger zone long before the middle has softened.
That single fact rescues more Thanksgivings than any other on this page, and it is the one least likely to be believed.
Stuffing: what USDA actually recommends
The stuffed timetable exists, and USDA would still rather you did not use it.
“For optimum safety, cook stuffing in a casserole. If stuffing your turkey, mix ingredients just before stuffing it; stuff loosely.”
The reasoning is that stuffing sits in the coldest part of the bird and absorbs raw poultry juices while it heats. It has to reach 165 °F in its centre, and by the time it does, the breast around it has usually gone well past that. Cooking it in a dish beside the bird removes the conflict entirely.

The pop-up timer, and what USDA really says about it
The received wisdom is that the pop-up timer cannot be trusted. USDA is more generous than that, and more specific.
“Pop-up temperature indicators have been produced since 1965 and are reliable to within 1 to 2 °F if accurately placed in the product. It is also suggested that the temperature be checked with a conventional thermometer in several places to insure safety.”
Both halves of that are load-bearing. The device itself is accurate to a degree or two — the failure mode is not the sensor but the placement, and you have no way of knowing from outside whether it went in where the manufacturer intended. So the pop-up is a reasonable prompt to go and check, and a poor substitute for checking. Treat it as a timer that knows something rather than as a verdict.
Planning backwards from the meal
The practical use of a range is that you plan from its far end and check from its near end. Take the upper bound of your band, add the twenty minute stand, and count backwards from when you want to serve. Then start checking the temperature before the lower bound arrives, because USDA's own advice on thermometers is to check before the food is expected to finish.

If it finishes early, that is a solved problem: USDA says a turkey held foil-covered in an oven at 140 °F or above stays safe, though more than a couple of hours will dry it out. Finishing late has no equivalent fix, which is why you plan from the top of the range.
What to keep
The weight tells you when to put the bird in. The thermometer tells you when to take it out. Those are two different instruments answering two different questions, and nearly every piece of bad turkey advice comes from letting one of them do the other's job.
Everything else on this page is USDA's, and most of it is a correction rather than a tip: the per-pound rules do not hold, stuffing adds less than you think, the rest is for carving, and a frozen bird is a fifty percent problem rather than a ruined dinner.
