The time is an estimate and the temperature is the rule. Start checking well before the low end of the range, and take the roast out when the thermometer reads 165°F in the thickest part, not when the clock runs out. Hold cooked meat above 140 °F until you serve it.
USDA recommends cooking stuffing in a casserole for optimum safety. If you do stuff the bird, the centre of the stuffing must also reach 165 °F.

The bird is done when a thermometer reads 165 °F in the thickest part of the breast and the innermost thigh and wing, whatever the clock says.
Every timing on this page is an estimate. The only figure that decides whether a roast is safe to eat is the internal temperature.
How to use the roasting time calculator
Choose your cut, enter the weight of the raw roast, pick the oven temperature and, for a bird, say whether it is stuffed. The panel leads with the safe minimum internal temperature for that cut and puts the estimated time underneath it, because that is the real order of importance.
Nearly every other calculator on this site leads with the number it computes. This one leads with a number it does not compute, and the inversion is deliberate. A clock cannot tell you whether a roast is safe. A thermometer in the thickest part of the meat can, and it is the only thing that can.

The time range comes from the USDA roasting charts. Some cuts are published as minutes per pound, others as a total time for a weight band, and this tool keeps whichever form USDA used rather than converting one into the other and losing what the original said.
That list is the honest reason a per-pound rate is a planning tool and nothing more. Two cooks with the same bird, the same weight and the same dial setting can finish forty minutes apart, and neither of them did anything wrong.

Choose a different setting here and the estimate is scaled by Newton law of cooling in its lumped-capacitance form, which is a standard heat-transfer model rather than a USDA figure. The panel says so whenever it applies.
That scaling cancels out the unknown properties of the joint, so it needs no invented constant, but it still treats a roast as a uniform lump, which no roast is. The further you move from the chart temperature, the more the thermometer and the less the arithmetic should govern what you do.

If the weight you enter falls outside the range the USDA chart actually covers, the panel says the estimate is extrapolated. That matters more here than on an ordinary converter, because an extrapolated time paired with a clock and no thermometer is exactly how an undercooked bird reaches a table.

- Cook all poultry to 165 °F and whole cuts of beef, pork, veal and lamb to 145 °F, measured with a food thermometer.
- Put the probe into the thickest part of the meat, keeping it clear of bone, fat and gristle.
- Check a turkey in three places: the thickest breast, the innermost thigh and the innermost wing.
- Rest whole cuts of red meat for at least 3 minutes; USDA counts that rest as part of the safety standard.
- Set the oven no lower than 325 °F, which is the floor USDA gives for roasting meat and poultry.
- Start checking the temperature before the low end of the estimated range, then keep checking.
Don't
- Judge doneness by colour. USDA states plainly that appearance and colour are not reliable indicators of safety or doneness.
- Treat a pop-up timer as the verdict. USDA says to use a food thermometer in addition to it, because the timer reads one spot.
- Apply these times to a frozen or partly frozen roast; they assume fully thawed meat from a 40 °F fridge.
- Assume the stuffing is safe because the bird is. Its centre needs its own reading of 165 °F.
- Let the probe touch bone, which conducts heat and reads hotter than the meat around it.
- Carve straight out of the oven and skip the rest, then serve meat that never finished the standard.

What happens after the roast leaves the oven
A roast does not stop cooking when you take it out. The outside is far hotter than the centre, and that heat keeps travelling inward for a while, so the internal temperature holds or keeps climbing after the oven door shuts. Cooks call this carryover, and USDA builds it into the standard.

That is why the 145 °F figure for beef, pork, veal and lamb comes with a rest time attached rather than as a bare number. USDA treats 145 °F plus 3 minutes as equivalent in safety to the old 160 °F with no rest, and it is the same standard federally inspected plants work to.
So resting is method, not delay. Poultry has no published rest requirement, but FSIS still suggests letting a turkey stand 20 minutes before carving so the juices set, and if the bird was stuffed, before the stuffing comes out.
The practical version is simple. Pull the roast when the thermometer reads the safe minimum, rest it, and check again before carving. If it reads a little higher after the rest than it did coming out, that is carryover doing exactly what USDA expects it to.
Is it safe to stuff the bird?
It can be, and USDA would rather you did not. FSIS advice is direct: for optimum safety, cook the stuffing in a casserole. Stuffing sits in the coldest part of the bird, it is dense, and it is soaked in raw poultry juices, so it is the last thing in the roasting pan to get hot.

Both time bands are the USDA figures for that weight. USDA band edges overlap — a 14 lb bird appears in both the 12 to 14 and the 14 to 18 row — so at a boundary weight this tool takes the shorter band and lets the thermometer decide. The two temperatures are separate requirements, and the bird reaching 165 °F does not settle the stuffing.
For the rest of the poultry chart USDA does not print a stuffed column at all. It gives one instruction covering every bird on it: add 15 to 30 minutes for stuffed birds. This tool applies exactly that, and says when the figure came from the addition rather than a published column.
Whole duck is the exception. The USDA chart prints "do not stuff" beside it, so the tool offers no stuffed timing for duck at all rather than inventing one. If you stuff a bird, mix the stuffing just before it goes in, pack it loosely, and give the centre its own thermometer reading.
The formula, worked line by line
There is no equation for roasting. There is a USDA lookup, a weight, and an adjustment for an oven the chart did not cover. What follows is exactly what this tool does, written out so you can check it against the source charts yourself.
USDA publishes some cuts as a rate in minutes per pound and others as a total time for a weight band, and the two are not interchangeable. A whole turkey has no meaningful per-pound figure, because the rate drops as the bird gets larger, so the band is kept as a band.

The time band says roughly 2 hours. The thermometer says when. Only one of those two is a safety instruction.
The 40 in the factor is the refrigerator temperature the USDA timetables assume, since FSIS states its times are based on fresh or thawed birds at 40 °F or below. The "done" term is that cut safe minimum, so a 145 °F roast and a 165 °F bird scale slightly differently in the same oven.
The factor is Newton law of cooling rearranged for the time to reach a target. The joint own thermal properties sit in a constant that appears on both sides of the ratio and cancels, which is what makes the adjustment possible without inventing a number for your particular roast.
It is still a model. A real roast has a crust, a fat cap, bone running through it and a shape nothing like a sphere, and none of that is in the arithmetic. At the chart temperature the factor is exactly 1 and you are reading USDA figures unaltered; away from it you are reading a projection.
Everything is finally rounded to the nearest 5 minutes, because a roasting estimate carried to the minute would be false precision. The oven cycles its element, the dial is probably a few degrees out, and the bird was a slightly different temperature going in than the chart assumed.
Questions people ask
How long do you roast a turkey per pound?
USDA does not publish a per-pound rate for whole turkey, and that is worth knowing rather than working around. It publishes bands: 8 to 12 lb takes 2 3/4 to 3 hours unstuffed at 325 °F, 12 to 14 lb takes 3 to 3 3/4 hours, 14 to 18 lb takes 3 3/4 to 4 1/4 hours, and 20 to 24 lb takes 4 1/2 to 5 hours. Those edges overlap, so a bird landing exactly on one — 14 lb sits in two rows — has two published answers; this tool takes the shorter band and leaves the thermometer to settle it. Divide those out and the implied rate falls as the bird grows, from over 20 minutes a pound at the small end to under 13 at the large end, which is why a single per-pound figure misleads. Whatever band you land in, the bird is done at 165 °F and not before.
What temperature is meat safe at?
USDA gives three figures that cover almost everything you will roast. All poultry, whole or in parts, is 165 °F (73.9 °C). Whole cuts of beef, pork, veal and lamb, including steaks, chops and roasts, are 145 °F (62.8 °C) followed by a rest of at least 3 minutes. Ground meats are 160 °F (71.1 °C) with no rest. Stuffing cooked inside a bird has to reach 165 °F in its centre, and reheated leftovers and casseroles are 165 °F too. Measure with a food thermometer in the thickest part of the food, keeping the probe away from bone, fat and gristle.
Can you tell if meat is cooked by the colour of the juices?
No, and USDA is unusually blunt about it. FSIS states that appearance and colour are not reliable indicators of safety or doneness, and reports that even when a hamburger looks fully cooked, one in four may not be safely cooked. Meat can brown before it is safe and can stay pink well after it is, depending on the cut, its pH and how it was packaged. The whole "Is It Done Yet?" campaign exists because of this gap. A food thermometer is the only way to know, it costs very little, and it also stops you overcooking a joint you paid for.
Is a pop-up timer enough to tell me the turkey is done?
Not on its own. USDA calls pop-up timers a useful tool but tells you to use a food thermometer in addition to one, and the reason is placement rather than accuracy. A pop-up reads a single spot, and a turkey cooks unevenly, so one part of the bird can be well past 165 °F while another is not there yet. USDA asks you to confirm 165 °F in three places: the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing. If any of the three is short, the bird goes back in, whatever the timer has done.
Why does a stuffed bird take longer to cook?
The stuffing is a dense, cold mass sitting in the least accessible part of the bird, so heat has to travel through the meat and then into the middle of the stuffing before anything is safe. USDA gives whole turkey its own stuffed timetable, which adds up to about half an hour depending on the weight, and tells you to add 15 to 30 minutes for every other stuffed bird on its chart. The important part is not the extra time. It is that the centre of the stuffing has to reach 165 °F in its own right, and USDA recommends cooking stuffing in a casserole instead for optimum safety.
